  • 2 cups cooked jasmine rice (cold & day-old)
  • 1 green onion (finely chopped)
  • 2.5 tbsp regular soy sauce
  • 1/2 tbsp sesame oil
  • 4 large eggs (beaten)
  • 2 tbsp vegetable oil

Instructions

  1. Heat vegetable oil in a large pan or wok over medium-high heat.
  2. Pour in the beaten eggs and stir-fry until they begin to set but are still moist.
  3. Add the cold rice to the pan, breaking apart clumps gently.
  4. Push everything to one side and add chopped green onions and remaining oil; mix well.
  5. Drizzle soy sauce and sesame oil around the edges of the pan, tossing until evenly coated.
  6. Serve hot.
