  • 1/4 cup granulated white sugar
  • 2 egg yolks
  • 2 tsp vanilla
  • 1 3/4 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 6 oz cream cheese
  • 3 tbsp granulated white sugar
  • 1/2 tsp vanilla
  • 1/4 cup granulated white sugar (for topping)
  • 1/4 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • pinch ground allspice
  • 12 tbsp salted butter, melted

Instructions

  1. Simmer apple cider in a saucepan until reduced to about 2 tablespoons, then let cool.
  2. Beat cream cheese with sugar and vanilla until smooth; set aside.
  3. Cream butter with sugars until fluffy, then add egg yolks and vanilla.
  4. Gradually mix in flour, baking powder, baking soda, salt, and spices until combined.
  5. Preheat oven to 350°F (175°C). Scoop dough onto baking sheets; flatten slightly.
  6. Place a dollop of cheesecake filling on each cookie ball, cover with more dough.
  7. Bake for about 11 minutes until edges are golden; brush with butter and sprinkle spiced sugar topping.
