  • 2 large baking potatoes
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp black pepper
  • 0.5 tsp red chili flakes
  • 200g block of feta cheese
  • 1 head of garlic (top cut off)
  • 1 lemon, quartered
  • 1 tbsp honey
  • 20g fresh basil

Instructions

  1. Preheat the oven to 200C (390F).
  2. Cube and par-boil the potatoes in salted water for 6-8 minutes; drain and let steam dry.
  3. In a baking dish, combine potatoes with olive oil, thyme, oregano, salt, black pepper, and chili flakes.
  4. Roast for 30-40 minutes until golden brown.
  5. Add feta cheese and squeeze half a lemon over it; return to oven for another 15 minutes.
  6. Squeeze garlic from its skins and mix with remaining lemon juice and fresh basil into the potatoes.
  7. Drizzle honey on top before serving.
