- 4 (8-inch) tortillas
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 3 cups chopped fresh spinach
- 8 oz sliced mushrooms
- Olive oil (for brushing)
- Preheat your oven to 400F (200C).
- Microwave sliced mushrooms in a bowl for 2-3 minutes and drain any excess liquid.
- Brush one side of each tortilla with olive oil, placing them oiled side down on a baking sheet.
- On half of each tortilla, layer half of the shredded cheese, chopped spinach, softened mushrooms, and remaining cheese before folding over.
- Bake for about 6 minutes, then flip and bake for an additional 6-7 minutes until golden brown and crispy.
