  • 400g Fresh Lo Mein noodles
  • 250g Beef sirloin
  • 34 Mushrooms
  • 23 Spring onions
  • 1 Bell pepper
  • 23 Cabbage leaves
  • 56 Snow peas
  • 1 Small carrot
  • 2 tbsp Vegetable oil
  • 2 tbsp Light soy sauce
  • 1 tbsp Sesame oil
  • 2 tsp Dark soy sauce
  • 4 tbsp Oyster sauce
  • 1 tbsp Sugar
  • 1 tbsp Apple vinegar or rice vinegar
  • ¼ tsp White pepper

Instructions

  1. Blanch the fresh Lo Mein noodles in hot water for 1–2 minutes. Drizzle with sesame oil and set aside.
  2. In a bowl, mix together all sauce ingredients and set aside.
  3. Wash and slice all vegetables, cutting the beef thinly against the grain.
  4. Marinate the sliced beef with one tablespoon of prepared sauce for 10–15 minutes.
  5. Heat vegetable oil in a wok over medium-high heat. Sear marinated beef for 1–2 minutes until cooked.
  6. Add vegetables to the wok starting with those that take longer to cook. Stir-fry for 1–2 minutes.
  7. Push ingredients aside and add blanched noodles topped with remaining sauce mixture.
  8. Toss everything together for another 2–3 minutes until heated through.
  9. Serve hot, garnished with chopped spring onions or chili oil as desired.
