  • 1 lb beef stew meat (cubed)
  • 2 tbsp olive oil
  • 1 medium onion (diced)
  • 2 cloves garlic (minced)
  • 3 medium carrots (peeled and sliced)
  • 2 medium potatoes (peeled and cubed)
  • 4 cups beef broth
  • 1 cup red wine (optional)
  • 1 bay leaf
  • 1 tsp dried thyme
  • 1 tbsp Worcestershire sauce
  • Bread bowls (sourdough or preferred type)

Instructions

  1. Heat olive oil in a large pot over medium heat. Sear the beef cubes until browned on all sides, about 5–7 minutes. Remove and set aside.
  2. In the same pot, sauté diced onion and minced garlic until soft, about 3–4 minutes. Add sliced carrots and cubed potatoes.
  3. Return seared beef to the pot. Pour in beef broth and red wine if using, then add bay leaf, dried thyme, and Worcestershire sauce. Stir well.
  4. Bring to a boil, then reduce heat to low and simmer for 1.5 to 2 hours until meat is tender.
  5. While simmering, hollow out bread bowls gently. Once stew is ready, ladle into bread bowls and serve.
