  • 200g beef sirloin or tenderloin, cubed
  • 1 cup broccoli florets
  • 1 cup sliced carrots
  • 1 cup snow peas
  • 1 onion, chopped
  • 2 tbsp soy sauce (divided)
  • 1 tsp garlic, minced
  • 2 tsp vegetable oil (divided)
  • 1 cup cooked rice (preferably day-old)
  • 1 egg, lightly beaten

Instructions

  1. Season the beef with salt and pepper. In a wok or skillet over high heat, heat 1 tsp of vegetable oil. Sear the beef for 2-3 minutes until browned and tender. Remove from the pan.
  2. In the same pan, add minced garlic and onion; stir-fry for about a minute until fragrant. Add broccoli, carrots, and snow peas; stir-fry for another 3-4 minutes. Add 1 tbsp soy sauce and toss well.
  3. In another pan over medium heat, add the remaining vegetable oil. Stir-fry diced carrots and corn for about 2 minutes until tender. Push to one side; scramble the egg in the pan before mixing it into the vegetables. Add day-old rice and remaining soy sauce; stir-fry for an additional 3 minutes.
  4. Serve plated or in bowls with fried rice beside the stir-fried beef and vegetables.
