  • 4 1/2 cups fresh broccoli florets
  • 5 slices cooked turkey bacon, crumbled
  • 1/4 cup finely chopped red onion
  • 2/3 cup dried cranberries
  • 1/2 cup sliced almonds
  • 1/3 cup roasted sunflower seeds
  • 1 cup sharp cheddar cheese, cubed
  • 2/3 cup mayonnaise
  • 1 Tbsp apple cider vinegar
  • 1/4 cup granulated sugar
  • Zest of 1 small lemon
  • Zest of 1/2 orange
  • 12 Tbsp lemon juice, freshly squeezed
  • 1/2 Tbsp poppy seeds
  • Pinch of black pepper

Instructions

  1. In a large pot, bring water to a boil. Blanch broccoli florets for 20 seconds and then transfer them to an ice water bath to cool.
  2. Soak chopped red onion in cold water for 5 minutes to reduce sharpness; drain.
  3. In a small bowl, whisk together mayonnaise, apple cider vinegar, sugar, lemon zest and juice, orange zest, poppy seeds, and black pepper until smooth.
  4. In a large mixing bowl, combine cooled broccoli with turkey bacon, red onion, cranberries, almonds, sunflower seeds, and cheddar cheese. Toss with desired amount of dressing.
  5. Cover and refrigerate for at least 30 minutes before serving to allow flavors to meld.
