  • 2 1/4 cups granulated sugar
  • 1 1/2 cups light brown sugar (packed)
  • 6 large eggs (room temperature)
  • 3 tbsp vegetable oil
  • 2 tbsp pure vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 1/2 cups cocoa powder
  • 1 1/2 tsps salt
  • 1.5 qts favorite ice cream flavor

Instructions

  1. Preheat oven to 350°F and grease two 8×8 pans lined with parchment paper.
  2. In a bowl, mix melted butter, granulated sugar, and brown sugar until combined.
  3. Add eggs one at a time, mixing well after each addition.
  4. Stir in vegetable oil and vanilla extract.
  5. In another bowl, whisk together flour, cocoa powder, and salt.
  6. Gradually mix dry ingredients into the wet mixture until just combined.
  7. Divide batter between prepared pans and spread evenly.
  8. Bake for 30-40 minutes until a toothpick comes out with moist crumbs.
  9. Cool brownies for about ten minutes before lifting them out onto a cooling rack to cool completely.
  10. Thaw ice cream slightly before spreading it over one half of the cooled brownies.
  11. Cap with the second half of brownie, wrap tightly in foil or plastic wrap, and freeze for at least six hours or overnight.
  12. When ready to serve, let thaw for five minutes before cutting into squares.
