  • 1 kg / 2 lbs butternut squash (peeled and thinly sliced)
  • 400 ml / 1¾ cups double cream
  • 2 bay leaves
  • A few sprigs of thyme
  • 1 garlic clove (crushed)
  • ½ tsp nutmeg
  • 100 g / 1 cup mature white Cheddar (grated)

Instructions

  1. Preheat oven to 350°F (180°C). In a mixing bowl, combine double cream, nutmeg, crushed garlic, thyme sprigs, and bay leaves. Bring to a boil over medium heat.
  2. Remove from heat and let the mixture infuse for 10-15 minutes.
  3. In a buttered baking dish, layer half of the butternut squash slices evenly. Pour half of the cream mixture over it.
  4. Add another layer of squash and cover with the remaining cream mixture. Cover with foil.
  5. Bake covered for 30 minutes, then uncover and sprinkle cheese on top. Bake for an additional 20-30 minutes until bubbly and golden.
