  • 3 lb spaghetti squash
  • 2 cups chopped fresh broccoli
  • 23 cloves garlic
  • ½ cup heavy cream
  • 1 tbsp cream cheese (optional)
  • ½ cup grated parmesan cheese
  • ¼ cup grated cheddar cheese (plus extra for topping)
  • ½ tsp olive oil (or avocado oil)
  • Salt and pepper (to taste)
  • ¼ tsp garlic powder

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise, scoop out seeds, brush with olive oil, and season with salt and pepper. Place cut-side down on a baking sheet.
  3. Roast for about 40 minutes until tender.
  4. While roasting, steam or sauté broccoli until tender (5-7 minutes). Add minced garlic and cook until fragrant.
  5. In a mixing bowl, combine broccoli mixture with heavy cream, cream cheese (if using), garlic powder, parmesan cheese, and cheddar cheese.
  6. Once roasted, scoop some squash strands into the filling mixture and stir well before refilling the squash halves.
  7. Top with additional cheddar cheese if desired and bake for another 10-15 minutes until heated through and golden.
