Ingredients

Scale
  • 1 small onion, finely chopped

  • 2 cloves garlic, minced
  • 2 large eggs, beaten
  • 8 ounces sour cream
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1.5 cups shredded cheddar cheese
  • 1 sleeve buttery crackers, crushed (about 32 crackers)
  • 3 tablespoons butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly spray a 9×13-inch baking dish with nonstick cooking spray.
  2. In a large skillet over medium heat, cook the turkey bacon until crisp (10–15 minutes). Drain on paper towels, leaving some grease in the skillet.
  3. Add chopped onions to the skillet and sauté for about 5 minutes until translucent. Stir in minced garlic and sauté for an additional minute.
  4. Add sliced yellow squash to the skillet and sauté for about 10 minutes until tender.
  5. In a mixing bowl, combine beaten eggs, sour cream, salt, pepper, and shredded cheddar cheese. Mix in the sautéed mixture.
  6. Pour into the prepared baking dish.
  7. In another bowl, mix crushed crackers with melted butter and sprinkle over the casserole.
  8. Bake for about 35–40 minutes until golden brown and bubbly. Let rest for 5 minutes before serving.
