  • 1 lb boneless, skinless chicken breast
  • 12 oz chow mein noodles
  • 2 cups cabbage
  • 1 large carrot (julienned)
  • 3 tbsp low sodium soy sauce
  • 6 tbsp mushroom sauce
  • 1/2 cup chicken broth
  • 3 tbsp light sesame oil
  • 1 tbsp corn starch
  • 3 tbsp oil
  • 1 tbsp granulated sugar
  • 2 garlic cloves
  • 1/2 batch green onions

Instructions

  1. In a mixing bowl, whisk together mushroom sauce, soy sauce, chicken broth, sesame oil, granulated sugar, and cornstarch. Set aside.
  2. Cook chow mein noodles according to package instructions; drain and rinse with cold water.
  3. Heat oil in a large wok or pan over medium heat. Cut chicken into bite-sized strips and cook until golden brown; remove from pan.
  4. In the same pan, sauté carrots, cabbage, and garlic for a few minutes until tender.
  5. Add cooked chicken and noodles back to the pan. Pour in the prepared sauce and stir-fry for another 2 minutes.
  6. Serve hot, garnished with chopped green onions.
