  • 2 cups ripe peaches, diced
  • 1/2 cup + extra turbinado sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/3 cup whole milk (or dairy-free milk)
  • 1.5 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1/4 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Dice the peaches into bite-sized pieces.
  2. In a mixing bowl, cream together the softened butter and turbinado sugar until well-combined. Add eggs one at a time, mixing until fully incorporated. Stir in the milk and vanilla extract.
  3. Gently fold in the diced peaches.
  4. Sift together flour, cinnamon, baking powder, baking soda, and salt; mix into the batter until just combined.
  5. Grease a 9×5 loaf pan or line with parchment paper. Pour in the batter and sprinkle additional turbinado sugar on top for crunch.
  6. Bake for 50-55 minutes or until a toothpick inserted into the center comes out mostly clean. Allow to cool for several minutes before transferring to a wire rack.
  7. For the icing glaze, combine powdered sugar with milk until desired consistency is reached; drizzle over cooled bread.
