  • 1 1/2 cups Cake Flour
  • 2 tsp. corn starch
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1 cup cold, unsalted butter, cubed (16 Tbsp.)
  • 1 1/4 cup granulated sugar
  • 2 large eggs
  • 2 large egg yolks
  • 1 tsp. vanilla extract
  • 1 cup packed brown sugar (light or dark)
  • 6 Tbsp. softened butter
  • 2 Tbsp. cinnamon
  • 8 oz. cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 1/2 cups confectioners sugar
  • 1 tsp. vanilla extract
  • 1/2 tsp. salt

Instructions

  1. Preheat your oven to 400°F (204°C).
  2. In a small bowl, mix brown sugar, softened butter, and cinnamon to create the filling.
  3. In a large bowl, whisk together all-purpose flour, cake flour, corn starch, baking soda, baking powder, and salt.
  4. In a stand mixer, cream cold butter until fluffy, then gradually add granulated sugar.
  5. Add eggs and vanilla; mix until combined.
  6. Gradually incorporate dry ingredients until just mixed.
  7. Shape dough into a rectangle and spread the cinnamon filling evenly on top.
  8. Roll up tightly from one edge and slice into equal pieces.
  9. Bake for 9–11 minutes until edges are golden.
  10. Allow to cool before frosting with cream cheese mixture.
