  • 1 tbsp coconut oil
  • 1 large yellow onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp curry powder
  • 1 tsp ground turmeric
  • 1 tsp ground coriander
  • 1/2 tsp chili flakes (optional)
  • 1 tbsp tomato paste
  • 1 (14 oz) can full-fat coconut milk

Instructions

  1. Heat coconut oil in a large pot over medium heat. Sauté the chopped onion, minced garlic, and grated ginger until the onion is translucent (about 5 minutes).
  2. Increase heat to medium-high and brown the beef chunks on all sides for about 8–10 minutes.
  3. Add the curry powder, ground turmeric, ground coriander, and chili flakes (if using). Stir well for about 2 minutes until fragrant.
  4. Mix in the tomato paste and pour in the full-fat coconut milk, stirring until combined.
  5. Reduce heat to low, cover, and let it simmer gently for about 2 hours or until the beef is fork-tender.
