- 8 oz orecchiette pasta (or other short pasta)
- 1 cup corn kernels (cooked)
- 1 red bell pepper (diced)
- 4 slices turkey (cooked and sliced)
- fresh cilantro (chopped)
- 1/3 cup basil pesto (store-bought or homemade)
- 3 tablespoons Greek yogurt
- 2 tablespoons mayonnaise
- 2 tablespoons lime juice (freshly squeezed)
- salt and pepper (to taste)
- 1. Cook the orecchiette pasta in salted boiling water until al dente. Drain and rinse under cold water.
- 2. While the pasta cooks, dice the red bell pepper and chop the fresh cilantro.
- 3. Cook turkey in a skillet until crispy, then slice into small pieces.
- 4. In a mixing bowl, combine basil pesto, Greek yogurt, mayonnaise, and lime juice until smooth.
- 5. In a large bowl, mix cooked pasta, corn, red bell pepper, turkey, cilantro, salt, and pepper.
- 6. Pour the creamy dressing over the salad and toss until evenly coated.
- 7. Chill for at least 10 minutes before serving.
