  • 8 oz orecchiette pasta (or other short pasta)
  • 1 cup corn kernels (cooked)
  • 1 red bell pepper (diced)
  • 4 slices turkey (cooked and sliced)
  • fresh cilantro (chopped)
  • 1/3 cup basil pesto (store-bought or homemade)
  • 3 tablespoons Greek yogurt
  • 2 tablespoons mayonnaise
  • 2 tablespoons lime juice (freshly squeezed)
  • salt and pepper (to taste)

Instructions

  1. 1. Cook the orecchiette pasta in salted boiling water until al dente. Drain and rinse under cold water.
  2. 2. While the pasta cooks, dice the red bell pepper and chop the fresh cilantro.
  3. 3. Cook turkey in a skillet until crispy, then slice into small pieces.
  4. 4. In a mixing bowl, combine basil pesto, Greek yogurt, mayonnaise, and lime juice until smooth.
