- 2 lbs boneless, skinless chicken thighs
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 1 tbsp Dijon mustard
- 1 cup chicken broth
- 8 oz cream cheese, softened
- 3/4 cup sour cream
- Optional: wilted spinach for serving
- In a large skillet over medium heat, cook the chopped chicken until crispy (5-7 minutes). Remove and drain on paper towels.
- In the same skillet, sauté diced onion in 1 tablespoon of drippings until translucent (3-5 minutes). Add garlic and smoked paprika; cook for another minute.
- Add chicken thighs to the skillet. Season with salt, pepper, and nutmeg. Cook until browned on both sides (6-8 minutes per side).
- Stir in Dijon mustard and chicken broth; bring to a simmer. Mix in cream cheese until fully blended.
- Remove from heat and stir in sour cream until smooth. Add back cooked chicken and mix well.
- Serve hot over pasta or rice with wilted spinach if desired.
