2 lbs boneless, skinless chicken thighs
1 medium yellow onion, diced
3 cloves garlic, minced
1 tbsp Dijon mustard
1 cup chicken broth
8 oz cream cheese, softened
3/4 cup sour cream
Optional: wilted spinach for serving
Instructions
In a large skillet over medium heat, cook the chopped chicken until crispy (5-7 minutes). Remove and drain on paper towels.
In the same skillet, sauté diced onion in 1 tablespoon of drippings until translucent (3-5 minutes). Add garlic and smoked paprika; cook for another minute.
Add chicken thighs to the skillet. Season with salt, pepper, and nutmeg. Cook until browned on both sides (6-8 minutes per side).
Stir in Dijon mustard and chicken broth; bring to a simmer. Mix in cream cheese until fully blended.
Remove from heat and stir in sour cream until smooth. Add back cooked chicken and mix well.
Serve hot over pasta or rice with wilted spinach if desired.
