  • 4 strips turkey bacon
  • 1/2 medium onion, chopped
  • 3 sticks celery, chopped
  • 2 medium carrots, peeled and chopped
  • 2 cloves garlic, minced
  • 1/4 cup flour
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 4 cups corn (fresh or frozen)
  • 2 large Russet potatoes, peeled and diced
  • Italian seasoning
  • cayenne pepper (optional)
  • salt & pepper

Instructions

  1. In a large pot over medium-high heat, cook turkey bacon until crispy (about 10 minutes). Remove and set aside.
  2. In the same pot, sauté onion, celery, and carrots in the remaining fat for about 5 minutes until softened.
  3. Add minced garlic and cook for an additional 30 seconds. Stir in flour for about a minute.
  4. Gradually add chicken broth while scraping the bottom of the pot to incorporate flavors.
  5. Stir in heavy cream, corn, diced potatoes, Italian seasoning, cayenne pepper (if using), and most of the turkey bacon (reserve some for garnish).
  6. Bring to a boil then reduce heat to simmer for 15-20 minutes until potatoes are tender.
  7. Season with salt and pepper to taste before serving hot with reserved bacon on top.
