  • 1 chicken breast
  • 1 tsp olive oil
  • Salt & pepper to taste
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 tbsp Dijon mustard
  • 1 tsp lemon juice (optional)
  • 1 tsp dried thyme or parsley
  • 68 asparagus spears, trimmed
  • 1 tsp olive oil
  • Pinch of salt
  • 1 cup baby potatoes, halved
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • Salt & pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Toss halved baby potatoes with olive oil, garlic powder, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes.
  3. Season the chicken with salt and pepper. In a skillet over medium-high heat, sear the chicken for 4-5 minutes per side until golden brown.
  4. In the same skillet, add chicken broth, Dijon mustard, heavy cream, lemon juice (if using), and herbs. Simmer for 3-5 minutes until slightly thickened before returning the chicken to coat it in the sauce.
  5. Sauté asparagus in olive oil for about 4-5 minutes until tender.
  6. Serve the sautéed asparagus topped with the creamy chicken and alongside crispy roasted potatoes.
