  • 1 lb fresh chow mein noodles
  • 2 cups thinly sliced cabbage
  • 1 cup sliced celery
  • 1 small sliced onion
  • 2 tbsp vegetable oil
  • 2 tbsp regular soy sauce
  • 1/2 tbsp dark soy sauce
  • 2 tbsp vegetarian stir fry sauce
  • 1 tbsp sesame oil
  • 2 minced garlic cloves
  • 1/4 cup low-sodium chicken stock

Instructions

  1. In a small bowl, mix together all the sauce ingredients: vegetable oil, soy sauces, vegetarian stir fry sauce, sesame oil, and minced garlic.
  2. Bring a large pan of water to boil over medium-high heat. Blanch chow mein noodles for about 20-30 seconds until loosened but still firm.
  3. Strain the noodles in a colander without rinsing them; keep warm.
  4. Heat 1 tablespoon of vegetable oil in the same large pan over medium heat. Add sliced onions, cabbage, and celery; stir-fry until softened (about 1 minute).
  5. Push the vegetables aside and add remaining oil to the empty space. Add strained noodles and prepared sauce; toss everything together until evenly coated.
  6. Remove from heat and serve immediately!
