  • 2 large hard-boiled eggs
  • 1 ripe avocado, diced
  • 1 cup cucumber slices
  • 1 cup cherry tomatoes, halved
  • 2 tbsp diced red onion
  • 1 cup fresh spinach leaves
  • 1 tsp olive oil
  • 1 tsp paprika
  • Salt and freshly cracked black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Boil eggs for 9-10 minutes. Cool under cold water, peel, and slice.
  2. In a serving bowl, layer fresh spinach leaves at the bottom.
