  • 8 chicken drumsticks
  • 3 tbsp olive oil (divided)
  • 3 garlic cloves, minced
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp paprika
  • Salt & pepper to taste
  • 600 g potatoes, cubed
  • 3 carrots, chopped
  • 1 red bell pepper, chopped
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 200C (390F).
  2. In a mixing bowl, combine 3 tbsp olive oil, minced garlic, thyme, oregano, paprika, salt, and pepper. Add chicken drumsticks and coat them thoroughly.
  3. In another bowl, toss the cubed potatoes, chopped carrots, and red bell pepper with the remaining olive oil, salt, and pepper.
  4. Arrange seasoned vegetables on a baking tray and nestle the marinated chicken among them.
  5. Roast in the oven for 40–45 minutes, turning halfway through until chicken is golden brown and cooked through.
  6. Garnish with fresh parsley before serving.
