  • 8 cups reduced sodium chicken broth
  • 4 boneless, skinless chicken thighs
  • 1/4 cup light soy sauce
  • 3 Tbsp light brown sugar
  • 2 inch piece fresh ginger, peeled and roughly chopped
  • 35 cloves garlic, roughly chopped
  • 4 green onions, cut into 2 inch pieces
  • 1 stalk lemongrass (optional), trimmed and cut into 2 inch pieces
  • 1/21 tsp red pepper flakes
  • 1/2 tsp black pepper
  • 2 Tbsp vegetable oil
  • 2 tsp minced ginger
  • 1 tsp minced garlic
  • 8 oz fresh shiitake mushrooms, halved or sliced
  • 5 oz baby spinach
  • 1 Tbsp sesame oil
  • 12 oz ramen noodles
  • 3 green onions, sliced

Instructions

  1. 1. In a large pot, combine chicken broth, soy sauce, ginger, garlic, green onions, lemongrass (if using), and red pepper flakes. Bring to boil and simmer for 15-20 minutes.
  2. 2. Season chicken thighs with black pepper and cook in heated oil in a skillet until golden brown on both sides.
  3. 3. Whisk together remaining glaze ingredients and pour over chicken in skillet. Cook until thickened.
  4. 4. Slice glazed chicken and strain the simmered broth into another pot. Add mushrooms and spinach; heat until vegetables are cooked.
  5. 5. Prepare ramen noodles separately according to package instructions; drain.
  6. 6. Assemble by adding noodles to bowls and topping with hot broth, sliced chicken, and desired toppings.
