  • 1.5 lbs salmon fillets (cut into 1-inch squares)
  • 2 large lemons (thinly sliced)
  • 16 10-inch bamboo skewers
  • 2 Tbsp freshly chopped parsley
  • 2 large or 3 small garlic cloves (pressed)
  • 1/2 Tbsp Dijon mustard
  • 1/2 tsp salt
  • 1/8 tsp ground black pepper
  • 2 Tbsp light olive oil
  • 2 Tbsp fresh lemon juice from 1/2 large lemon or 1 small lemon

Instructions

  1. Soak bamboo skewers in water for at least 1 hour to prevent burning. Preheat the grill to medium heat (approximately 375°F).
  2. In a medium bowl, combine parsley, garlic, Dijon mustard, salt, pepper, olive oil, and lemon juice to create the marinade.
  3. Skewer the salmon and folded lemon slices onto two skewers at a time for easier turning on the grill. Brush both sides of the skewers with marinade.
  4. Oil the grill grates and place the skewers on the grill. Cook for about 3-4 minutes per side until salmon is opaque and cooked through.
