  • 10 oz zucchini, sliced
  • 10 oz yellow squash, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 3 teaspoons Italian seasoning
  • Salt and pepper
  • 1/3 cup grated Parmesan cheese (or more to taste)
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons fresh lemon juice

Instructions

  1. Dice chicken into small pieces and season with salt, pepper, 1 teaspoon Italian seasoning, and 1/2 teaspoon garlic powder.
  2. Heat a large skillet over medium heat with 1 tablespoon olive oil and 1 tablespoon butter. Add the seasoned chicken and cook for about 5-7 minutes until golden brown.
  3. Add sliced zucchini and yellow squash along with remaining seasonings—2 teaspoons Italian seasoning, remaining garlic powder, salt, and pepper. Stir well.
  4. Cook for another 5-7 minutes until vegetables are tender yet crisp. Stir in lemon juice before removing from heat.
  5. Serve topped with grated Parmesan cheese, chopped parsley, and additional lemon zest.
