  • 1 cup sweet potato, cubed
  • 1 cooked turkey sausage link, sliced
  • 1 cup chopped kale or spinach
  • 1 avocado, sliced

Instructions

  1. Preheat your oven to 400°F (200°C). Toss cubed sweet potatoes with olive oil, salt, and pepper. Spread on a baking sheet and roast for about 20-25 minutes until golden.
  2. In a skillet over medium heat, sauté minced garlic in oil until fragrant. Add chopped kale or spinach and cook until wilted. Season with salt and pepper.
  3. Slice the turkey sausage link and pan-sear in the same skillet for about 2-3 minutes per side until browned.
  4. Whisk eggs in a mixing bowl. Heat a nonstick pan over medium-low heat and scramble the eggs gently until soft curds form; season as desired.
