  • 2 1/2 cups all-purpose flour
  • 1 tablespoon granulated sugar
  • 1 teaspoon kosher salt
  • 2 sticks (8 oz) unsalted butter, diced and very cold
  • 69 tablespoons ice water
  • 2 large honey crisp apples, peeled and diced small
  • 18 oz fresh blackberries
  • 1/3 cup granulated sugar (for blackberry filling)
  • 1 teaspoon vanilla extract

Instructions

  1. In a stand mixer, combine flour, sugar, and salt. Add cold butter and mix until resembling coarse sand. Gradually add ice water until the dough clumps together.
  2. Chill the dough for at least one hour.
  3. For the apple filling, sauté diced apples in salted butter; stir in barley tea, vanilla bean paste, cinnamon, and brown sugar until syrupy.
  4. Roast blackberries on a baking sheet; simmer with granulated sugar and vanilla extract until thickened.
  5. Roll out chilled dough; cut into pumpkin shapes using a cookie cutter. Assemble by placing filling on uncut shapes, sealing with cutout tops.
  6. Bake at 375°F for approximately 25 minutes until golden brown.
