- 12 ounces noodles of choice
- 1 pound chicken breast
- 2 tablespoons low sodium tamari
- 1 tablespoon honey
- 1 tablespoon chili paste
- 1 tablespoon toasted sesame oil
- 1/2 cup diced green onion
- 1 tablespoon minced garlic
- 1/2 cup low sodium tamari (for sauce)
- 3 tablespoons water
- 1 tablespoon cornstarch
- 1/3 cup crushed peanuts
- Cut the chicken into small pieces and marinate in a mixture of tamari, honey, and chili paste for at least 30 minutes.
- Cook noodles according to package instructions; drain and set aside.
- In a bowl, whisk together sauce ingredients except for water and cornstarch.
- Heat sesame oil in a skillet over medium-low heat; sauté green onion for 2-3 minutes, then add garlic for another minute.
- Add marinated chicken to the skillet; cook until fully cooked, about 6 minutes total.
- In another pot, combine prepared sauce with cornstarch mixed with water; heat until thickened.
- Mix cooked chicken and noodles into the sauce until well coated.
- Garnish with crushed peanuts and serve hot.
