  • 1/3 cup pine nuts
  • 2 handfuls baby arugula
  • 1/3 cup parmesan cheese, freshly grated
  • 1/4 cup thinly sliced fresh basil leaves
  • 1 to 2 cloves garlic, grated
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 teaspoon lemon zest
  • 2 tablespoon freshly squeezed lemon juice
  • 2 tablespoons white balsamic vinegar
  • 1/2 teaspoon dijon mustard
  • 3 tablespoon extra virgin olive oil
  • fine salt for seasoning pasta water
  • kosher salt to taste
  • freshly ground black pepper to taste

Instructions

  1. Start by bringing a large pot of salted water to a boil.
  2. Add the bowtie pasta to the boiling water.
  3. Cook according to package instructions until al dente.
  4. Drain the pasta using a colander and rinse under cold water to stop cooking.
  5. In a small skillet over medium heat, add the pine nuts.
  6. Toast them until golden brown, stirring frequently to prevent burning. This should take about 3–5 minutes.
  7. In your mixing bowl, combine grated garlic, kosher salt, black pepper, lemon zest, lemon juice, white balsamic vinegar, dijon mustard, and olive oil.
  8. Whisk together until emulsified.
  9. In your large mixing bowl, add cooled pasta along with arugula, toasted pine nuts, parmesan cheese, and basil leaves.
  10. Pour vinaigrette over the top and toss gently to combine all ingredients evenly.
  11. Taste your salad before serving, adjust seasoning with kosher salt and freshly ground black pepper as needed.
  12. Serve immediately or chill in the fridge for an hour to enhance flavors.
