  • 3 pounds red potatoes
  • 8 ounces cream cheese
  • 4 tablespoons butter
  • 6 to 8 cups pulled beef
  • 8 ounces shredded sharp Cheddar cheese
  • 8 ounces turkey bacon (cooked and crumbled)
  • 6 green onions (thinly sliced)
  • 3 green onions (sliced, optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large pot, boil salted water and cook the red potatoes until fork-tender. Drain and return them to the pot.
  3. Mash the potatoes lightly before mixing in cream cheese, butter, crumbled turkey bacon, green onions, and half of the shredded cheese.
  4. Spread this mixture into a greased 9 x 13 baking dish.
  5. Layer the pulled beef on top and sprinkle with remaining shredded cheese.
  6. Cover with foil and bake for 15 minutes; then remove foil and bake for another 5 minutes until cheese is melted.
