  • 2 boneless, skinless chicken breasts
  • 2 medium zucchinis
  • 1 cup cherry tomatoes
  • ½ red onion
  • 2 cloves garlic
  • Olive oil
  • Dried oregano
  • ½ teaspoon dried basil
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon red pepper flakes (optional)
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons fresh parsley for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Grease a 9×13-inch baking dish with olive oil.
  3. In a mixing bowl, combine bite-sized chicken pieces, sliced zucchinis, halved cherry tomatoes, diced red onion, minced garlic, olive oil, and seasonings. Mix until well coated.
  4. Spread the mixture evenly in the prepared baking dish.
  5. Top with mozzarella and Parmesan cheese.
  6. Cover with foil and bake for 20 minutes.
  7. Remove foil and bake for another 10–15 minutes until cheese is golden brown.
  8. Garnish with fresh parsley before serving.
