  • 2 small or 1 medium yellow squash (1 cup shredded)
  • 1 large egg
  • 1/3 cup all-purpose flour
  • 1/3 cup shredded Parmesan cheese
  • Vegetable or olive oil for frying

Instructions

  1. Shred the yellow squash using a box grater or food processor to obtain about 1 cup of packed shredded squash.
  2. Squeeze out excess moisture from the squash over a bowl or sink, then transfer it to a medium bowl.
  3. In the same bowl, lightly beat the egg with a fork on one side. Add the flour, Parmesan cheese, salt (if using), and pepper; mix well.
  4. Heat oil in a skillet over medium heat until hot. Drop spoonfuls of batter into the skillet, cooking in batches if needed.
  5. Fry for 3-4 minutes per side until golden brown and crispy.
