  • 4 tablespoons soy sauce
  • 3 tablespoons oyster sauce
  • 3 tablespoons water
  • 1 tablespoon sambal oelek (chili paste)
  • 1 tablespoon honey
  • 1 tablespoon fresh ginger (I use a paste)
  • juice of 2 limes
  • 2 garlic cloves, minced
  • 4 green onions, minced
  • 1 tablespoon rice vinegar (optional – makes it more tangy)
  • 1 teaspoon cornstarch (optional – helps the sauce thicken)
  • 2 tablespoons sesame oil
  • 1 lb. ground chicken or turkey
  • 1/2 cup lightly salted peanuts, chopped
  • 6 ounces rice noodles
  • 12 leaves of lettuce (I used Boston lettuce)
  • chopped cilantro, green onions, and peanuts for topping

Instructions

  1. In a small bowl, whisk together soy sauce, oyster sauce, water, sambal oelek, honey, ginger, lime juice, garlic, green onions, rice vinegar (if using), and cornstarch until smooth.
  2. Combine 3/4 of the sauce with the ground chicken and chopped peanuts in a separate bowl; let marinate for 15 minutes.
  3. Soak rice noodles in warm water until softened; drain and cut into small pieces.
  4. Heat sesame oil in a skillet over medium heat; add marinated chicken mixture and cook for about 10 minutes until fully cooked through.
  5. Stir in rice noodles and sauté for an additional 5 minutes until heated through.
  6. Scoop the filling into each lettuce leaf and top with additional sauce, cilantro, green onions, and chopped peanuts.
