  • 1 green capsicum
  • 1 medium onion
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp crushed chili flakes
  • 1 tsp ground black pepper
  • 1 tsp minced garlic
  • 1 tbsp cooking oil (vegetable or sesame)
  • 1 cup basmati rice
  • 2 cups water
  • A pinch of salt

Instructions

  1. Rinse basmati rice under cold water until clear. Combine with salt and water in a pot, boil, then simmer covered for 10-12 minutes until fluffy.
  2. Heat oil in a wok over medium-high heat. Sauté minced garlic briefly, then add diced chicken and cook until golden brown (5-7 minutes).
  3. Add chopped onion and capsicums to the wok; stir-fry for 3-4 minutes until veggies are crisp.
  4. Mix in soy sauce, oyster sauce, crushed chili flakes, and ground black pepper; toss well and heat through for another minute.
