  • 2 cups heavy cream
  • 1/3 cup granulated sugar (plus extra for topping)
  • 4 large egg yolks
  • 1 tsp vanilla extract
  • 1 cup pumpkin puree
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 325°F (160°C) and prepare a water bath by placing hot water in a baking dish.
  2. In a mixing bowl, whisk together the egg yolks and granulated sugar until well combined.
  3. Heat heavy cream in a saucepan until hot but not boiling. Gradually incorporate it into the egg mixture while whisking continuously.
  4. Stir in pumpkin puree, vanilla extract, cinnamon, ginger, and salt until smooth.
