  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 3 carrots, peeled and sliced
  • 3 celery stalks, chopped
  • 3 medium potatoes, diced
  • 4 cups beef broth
  • Fresh herbs (thyme and rosemary)
  • Salt and black pepper

Instructions

  1. Heat olive oil in a Dutch oven over medium-high heat. Brown the beef cubes for about 5-7 minutes. Remove and set aside.
  2. In the same pot, sauté onions and garlic until translucent (about 3-4 minutes). Add carrots, celery, and potatoes; cook for another 5 minutes.
  3. Return the beef to the pot along with tomato paste and Worcestershire sauce. Pour in beef broth and add herbs, salt, and pepper.
  4. Bring to a boil then reduce heat to low. Cover and simmer for about 2 hours until beef is tender.
  5. Prepare bread bowls according to instructions while the stew simmers.
