  • 2 1/4 tsp active dried yeast
  • 2 large eggs, at room temperature
  • 1/2 tsp kosher salt
  • 565g all-purpose flour
  • 100g unsalted butter, at room temperature
  • 850g – about four medium apples, peeled, cored, and diced small
  • 30g unsalted butter
  • 80g granulated sugar
  • 1/2 tsp ground cinnamon
  • 1/4 tsp kosher salt
  • 1 tbsp corn starch
  • 125g pecan halves
  • 190g unsalted butter, at room temperature
  • 280g brown sugar
  • 2 tbsp plus 1 tsp ground cinnamon
  • 1/8 tsp kosher salt
  • 115g unsalted butter, at room temperature
  • 225g cream cheese, at room temperature
  • 250g powdered sugar, sifted
  • 12 tbsp heavy whipping cream
  • 1/2 tsp kosher salt

Instructions

  1. 1. Prepare the dough by mixing lukewarm milk with sugar and yeast; let it foam. Add eggs and salt before gradually incorporating flour and kneading in softened butter until smooth.
  2. 2. Allow the dough to rise in a greased bowl covered with a towel until doubled in size (about 1 hour).
  3. 3. Make the filling by sautéing diced apples with sugar, cinnamon, and butter until tender.
  4. 4. Roll out the dough and spread softened butter over it. Sprinkle with a mixture of brown sugar and cinnamon before layering the apple filling and pecans.
  5. 5. Roll tightly into a log, slice into pieces, and let them rise again for about 30 minutes before baking at 350°F (175°C) for 25-30 minutes until golden brown.
  6. 6. For the frosting, beat together cream cheese and butter with powdered sugar; add heavy whipping cream as needed for consistency.
