  • 2 pounds yellow squash (sliced ¼ inch thick)
  • 1/4 cup butter
  • 1/2 cup diced onion
  • 1/2 teaspoon garlic powder
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • ½ cup sour cream
  • 1 large egg (beaten)
  • 1 cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • 1 cup butter crackers (finely crushed)

Instructions

  1. Sauté onions in 1 tablespoon of butter over medium heat until soft.
  2. Add sliced yellow squash and cook until tender.
  3. Drain excess moisture using a colander lined with a towel.
  4. Mix drained squash with garlic powder, salt, pepper, sour cream, beaten egg, cheddar cheese, and 1/4 cup of Parmesan cheese.
  5. Prepare topping by mixing melted butter with crushed crackers and remaining Parmesan cheese.
  6. Combine the squash mixture in a baking dish and evenly top with cracker mixture.
  7. Bake at 350°F for about 25 minutes until bubbly and golden on top.
