  • 150g boneless, skinless chicken breast
  • 1 tsp olive oil
  • tsp paprika
  • tsp garlic powder
  • tsp cayenne pepper (adjust to spice preference)
  • Salt & black pepper, to taste
  • cup uncooked white rice
  • 1 cup water
  • Pinch of salt
  • cup sliced cucumber
  • cup cherry tomatoes, halved
  • 2 tbsp diced red onion
  • 1 tsp chopped fresh parsley or dill
  • Salt & pepper, to taste
  • avocado, sliced
  • 1 tbsp spicy mayo (mayonnaise mixed with sriracha)

Instructions

  1. Rinse the rice until water runs clear. Combine with water and salt in a pot. Bring to a boil, reduce heat, cover, and cook for 12–15 minutes until fluffy.
  2. In a skillet, toss chicken cubes with olive oil and spices. Cook over medium-high heat for 6–8 minutes until golden and cooked through.
  3. In a bowl, mix sliced cucumber, cherry tomatoes, red onion, herbs, salt, and pepper.
  4. In serving bowls, layer the rice, followed by chicken and salad. Top with sliced avocado and drizzled spicy mayo.
