  • 4 cups shredded yellow squash
  • 1 medium sweet onion (finely diced)
  • 2 large eggs (beaten)
  • 1 cup self-rising flour
  • 1/4 cup grated Parmesan cheese
  • 1 Tbsp chopped chives or parsley
  • 1 tsp seasoned salt
  • 1 tsp garlic powder
  • 1/2 tsp ground cumin
  • 1/4 tsp ground black pepper
  • dash of cayenne
  • 4 Tbsp vegetable oil
  • 4 Tbsp salted butter
  • 2/3 cup panko bread crumbs

Instructions

  1. Blot the shredded squash with paper towels to remove excess moisture.
  2. In a large bowl, combine shredded squash, diced onion, and beaten eggs until well mixed.
  3. Add self-rising flour, Parmesan cheese, chives or parsley, seasoned salt, garlic powder, cumin, black pepper, and cayenne. Stir until fully combined.
  4. In a nonstick skillet over medium-high heat, melt 1 tablespoon each of vegetable oil and butter.
  5. Form patties from the mixture using a spoon or ice cream scoop; coat with panko crumbs before frying.
  6. Fry each croquette for about 2–3 minutes per side until golden brown.
  7. Drain on paper towels before serving warm.
