  • 1 cup homogenized milk
  • 1 teaspoon baking soda
  • 2 tablespoons butter
  • 1 cup dark brown sugar
  • 2 eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • 2 cups unbleached all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon kosher salt
  • Sea salt flakes for garnish
  • ½ cup butter for caramel sauce
  • 1 cup brown sugar for caramel sauce
  • ½ cup 35% cream for caramel sauce
  • 1 teaspoon kosher salt for caramel sauce

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly butter an 11 x 8-inch oven-safe dish.
  2. In a small bowl, combine chopped dates and baking soda. Scald the milk in a saucepan, then pour over the dates and set aside to cool for about 15 minutes.
  3. In another bowl, mix flour, baking powder, and salt. In a food processor, blend eggs, dark brown sugar, butter, and vanilla until combined. Gradually add dry ingredients followed by the soaked dates and liquid; blend until smooth.
  4. Pour the batter into the prepared dish and bake for about 30 minutes until golden brown.
  5. While the cake bakes, prepare the caramel by melting butter in a saucepan, adding brown sugar and salt. Stir in cream and simmer until thickened.
  6. After baking, poke holes in the cake and pour one-third of the caramel sauce over it to soak in.
