  • 0.3 ounces sugar-free strawberry Jell-O (1 package)
  • 4 egg whites
  • ⅓ cup canola oil
  • 1 cup frozen unsweetened strawberries (thawed)
  • ½ cup water
  • ⅓ cup butter (softened)
  • 2 ⅓ cups powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C) and prepare two 9-inch round pans by greasing and flouring them.
  2. In a large bowl, combine the white cake mix and strawberry Jell-O until well mixed. Add egg whites and canola oil; beat until blended.
  3. Mash the thawed strawberries, reserving 3 tablespoons for icing. Mix remaining strawberries with water into batter.
  4. Pour batter into prepared pans and bake for 20-25 minutes or until a toothpick comes out clean. Cool in pans for 10 minutes before moving to a wire rack.
  5. For frosting, blend softened butter with reserved strawberries and gradually mix in powdered sugar until light and fluffy.
  6. Frost cooled cakes, layering them with half the icing in between and covering the entire cake afterward.
