  • 1.5 lbs top sirloin steak (or flank/skirt steak)
  • 1 cup potato starch
  • oil (for deep frying)
  • 1 small onion
  • 2 cloves garlic
  • 45 slices ginger (sliced thin, 23 mm)
  • 1 tablespoon light soy sauce (reduced sodium)
  • 3/4 cup honey
  • 1/4 cup + 2 tablespoons light soy sauce (reduced sodium)
  • 1/2 cup water
  • 1 tablespoon hoisin sauce
  • 1/2 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon shaoxing cooking apple vinegar
  • 5 teaspoons corn starch
  • 6 teaspoons water
  • 12 stalks green onion (chopped)
  • toasted sesame seeds

Instructions

  1. Cut the beef into thin strips against the grain and coat with potato starch.
  2. Heat oil in a deep frying pan over medium-high heat until hot.
  3. Fry beef strips in batches until golden brown and crispy. Drain on paper towels.
  4. In another pan, sauté onion, garlic, and ginger until fragrant; add honey, soy sauce, water, hoisin sauce, sesame oil, and simmer.
  5. Thicken the sauce with a corn starch-water mixture.
  6. Combine the fried beef with the sauce and toss to coat.
  7. Serve garnished with green onions and sesame seeds over rice or as desired.
