  • 1 cup cooked white or brown rice
  • 1 cup broccoli florets
  • 1/2 cup bell peppers (sliced)
  • 1/2 cup carrots (julienned)
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • Optional garnishes: chopped green onions, sesame seeds

Instructions

  1. In a small bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, garlic, ginger, and cornstarch slurry; set aside.
  2. Heat vegetable oil in a large skillet over medium heat. Add cubed chicken; cook until golden brown (6-7 minutes).
  3. Pour teriyaki sauce over the chicken; simmer for 2-3 minutes until slightly thickened.
  4. Stir-fry broccoli, bell peppers, and carrots in another pan for about 3-4 minutes until tender-crisp.
  5. Serve cooked rice in bowls topped with teriyaki chicken and stir-fried veggies. Garnish with green onions and sesame seeds.
