  • 3 pasilla peppers
  • 2.5 pounds beef chuck (cubed)
  • 2 tablespoons olive oil
  • 1 medium white onion (chopped)
  • 3 jalapeno peppers (chopped)
  • 4 cloves garlic (chopped)
  • 2 cups beef stock
  • 2 tablespoons masa harina (optional)

Instructions

  2. Cool, remove stems and seeds, then soak in hot water for 20 minutes.

  6. Return beef to the pot, add chili paste, and simmer for 2 hours with stock and water.
