  • 1 1/22 cups cherry tomatoes
  • 23 peaches
  • 1 cup pitted fresh cherries
  • 8 ounces burrata cheese
  • 1/4 cup toasted pumpkin seeds
  • 1/2 cup extra virgin olive oil
  • 1/4 cup balsamic or chicken champagne vinegar
  • 1 tablespoon honey
  • 1/2 shallot, finely chopped
  • 1 clove garlic, grated
  • 1 teaspoon lemon zest
  • 1/4 cup chopped fresh basil
  • 2 tablespoons chopped fresh oregano
  • 1 tablespoon chopped fresh dill
  • 1 tablespoon chopped fresh thyme
  • red pepper flakes
  • kosher salt and black pepper

Instructions

  1. In a glass jar, combine vinaigrette ingredients and shake until smooth.
  2. In a large bowl, toss together the cherry tomatoes, peach wedges, and cherries. Drizzle with one-third of the vinaigrette and let sit for 15 minutes.
  3. Gently break apart the burrata over the salad mixture. Drizzle with remaining vinaigrette and sprinkle with pumpkin seeds.
  4. Serve immediately with grilled bread or as a standalone dish.
