  • 1/2 cup dry quinoa
  • 23 cups chopped tomatoes
  • 15 oz can chickpeas (drained and rinsed)
  • 1/4 cup fresh lime juice
  • 2 tablespoons avocado oil
  • 1 clove garlic (minced)
  • Fresh parsley (to taste)
  • Ground cumin, sea salt, and pepper

Instructions

  1. Rinse the quinoa using a mesh strainer. Lightly toast in a small pot over medium heat for a few minutes.
  2. Add water to the pot and bring to a boil. Reduce heat to low, cover slightly ajar, and simmer for 12–13 minutes until fluffy.
  3. While quinoa cooks, chop tomatoes and green onions.
  4. In a bowl, combine lime juice, avocado oil, minced garlic, parsley, cumin, salt, and pepper.
  5. Fluff the cooled quinoa with a fork. Mix with tomatoes, chickpeas, green onions, and half of the dressing. Toss gently and adjust seasoning.
