  • 2 medium zucchini, sliced lengthwise
  • 1 cup ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 cup marinara sauce
  • 1 tsp dried oregano
  • Fresh basil for garnish

Instructions

  1. Preheat your oven to 190C (375F) and lightly grease a baking dish.
  2. Arrange zucchini slices in a single layer at the bottom of the dish and sprinkle with oregano.
  3. Spread half of the ricotta over the zucchini followed by half of the marinara sauce. Repeat these layers with remaining ingredients.
  4. Top with shredded mozzarella cheese.
  5. Cover with foil and bake for 25-30 minutes, then uncover and bake for an additional 10-15 minutes until golden brown.
  6. Let cool slightly before garnishing with fresh basil and serving warm.
