2 zucchini squash (sliced thin)
4–5 tomatoes (sliced)
1–1/2 cups shredded mozzarella cheese
1/2 cup shredded Parmesan cheese
2 tablespoons butter (melted)
3/4 cup fine bread crumbs
2 teaspoons garlic powder
1 teaspoon basil
1 teaspoon oregano
Salt and pepper to taste
Instructions
Preheat your oven to 375°F (190°C) and grease a 9×9 baking dish with nonstick cooking spray.
In a mixing bowl, combine mozzarella cheese, Parmesan cheese, garlic powder, basil, oregano, salt, and pepper; mix well.
Layer sliced zucchini at the bottom of the prepared baking dish followed by 1/4 of the cheese mixture. Add sliced tomatoes and another 1/4 of the cheese mixture. Repeat until all ingredients are used.
In another bowl, mix melted butter with bread crumbs until coated.
Sprinkle the breadcrumb topping evenly over the casserole layers. Cover with foil and bake for 25 minutes; then remove the foil and bake for an additional 20 minutes or until vegetables are tender and topping is golden brown.
Let stand for 5 minutes before slicing and serving warm.
